During a family trip through Japan, I became deeply inspired by the elegance and precision of Japanese pastry culture. In Kyoto especially, I discovered beautifully balanced yuzu desserts that left a lasting impression on me.

That experience eventually inspired our own interpretation of yuzu in curd form.

This curd highlights the unique aroma of Japanese yuzu — somewhere between mandarin, grapefruit, and lemon, yet entirely its own.
